A Kentucky Derby report, of sorts, on a West Paducah pecan farmer whose crop is being served this week at the restaurants at Churchill Downs. Steve Kight says after a January 2009 ice storm, he thought his father’s 80 acres of pecans were doomed. But after pruning, fertilization, and three years, they had a bumper crop last year, and then made connections with Kentucky Proud, leading them to this week’s connection with the Derby.
